Hawaiian Kanpachi Watermelon Ceviche
HAWAIIAN KANPACHI WATERMELON CEVICHE
Part: Top Loin
INGREDIENTS:
- 1 lb fresh, Hawaiian Kanpachi Filet
- 1/4 cup lime juice
- 2 tbsp seasalt
- 1/4 cup diced watermelon
- 1/4 cup diced cucumber
- 1 tsp chili oil
- 1/8 cup chopped mint
- 1/8 cup chopped basil
In honor of National Watermelon Day (August 3rd), we highlight our Hawaiian Kanpachi with this delicate and refreshing fruit. They pair so well together with the natural richness from the fish, this is the perfect balance.
Combine fresh fish, sea salt and lime juice together and allow to sit and brine for one hour. Then add the rest of the ingredients. Mix well and then store in the refrigerator until serving. Pair with a crisp Vino Verde white wine.
